TIP: If you must cook the vegetables, it’s best to chop the vegetables approximately ten minutes prior to cooking, as the converted enzymes won’t be impacted; only the un-converted myrosinase will be destroyed not the isothiocyanates that were already converted.
Alliinase is an enzyme that’s present in allium vegetables like shallots, onions, and garlic. Alliinase converts alliin into allicin. Allicin has a range of benefits, as it has antifungal, antimicrobial, antibacterial, antithrombotic, antiarthritic, anticancer and lipid-lowering properties.
